Benihana-Style Diablo Sauce

I've been trying to recreate that spicy mayo they serve at hibachi restaurants for years, and it turns out the secret ingredient is togarashi - that Japanese 7-spice blend with the orange peel and sesame seeds. Mix it with mayo, honey, and ketchup and you get that exact sweet-heat combination that goes so well with grilled meat.

Ingredients

  • 1/4 cup Kewpie brand mayonnaise 4 tablespoons
  • 2 tablespoons ketchup
  • 2 tablespoons clover honey
  • 1/4 cup shichimi togarashi Japanese seven spice

Instructions

  • Mix shichimi togarashi, honey, and ketchup in a bowl until it forms a thick paste.
  • Add Kewpie mayonnaise and whisk until completely smooth.
  • Cover and refrigerate for 30 minutes to allow flavors to meld.

Notes

For a milder sauce, add additional mayonnaise one tablespoon at a time to taste. Store covered in refrigerator.
