Benihana-Style Mustard Cream Sauce

This sauce is wild - you blend toasted sesame seeds into soy sauce, then whisk in warm cream and mustard powder. It sounds like it shouldn't work but it creates this rich, nutty sauce that's incredible on steak.

Ingredients

  • 1 cup low-sodium soy sauce
  • 1/2 cup heavy cream
  • 2.5 tablespoons white sesame seeds
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon water
  • 1/8 teaspoon granulated garlic

Instructions

  • Toast sesame seeds in dry skillet over medium heat 2-3 minutes until golden.
  • Mix mustard powder, garlic, and water into paste.
  • Blend toasted seeds, mustard paste, and soy sauce 30-60 seconds until emulsified.
  • Warm heavy cream over medium-low heat.
  • Whisk soy-sesame mixture into warm cream until smooth.
  • Keep warm until serving.

Notes

Do not let cream boil. Sauce should be served warm.
