High Protein Gochujang Noodles

This is one of those recipes that's almost embarrassingly simple but tastes way better than it should - gochujang, mayo, and black vinegar whisked together make this creamy-spicy sauce that coats the noodles perfectly. The fried egg on top breaks and mixes into everything, adding even more richness and protein.

Ingredients

For the Gochujang Sauce

  • 1/4 cup gochujang
  • 3 tablespoons Kewpie mayonnaise
  • 3 tablespoons Chinese black vinegar

For the Noodles & Garnish

  • 4 packages ramen noodles
  • 4 large eggs
  • 2 tablespoons neutral oil divided
  • Sliced scallions
  • Black sesame seeds

Instructions

  • Whisk gochujang, Kewpie mayo, and black vinegar in a large bowl until smooth.
  • Bring large pot of water to boil and cook ramen noodles according to package directions.
  • Heat 1 tablespoon oil in non-stick skillet over medium-high heat and fry eggs sunny-side up.
  • Drain noodles and immediately toss with sauce in bowl until well coated.
  • Divide noodles between bowls, top each with fried egg, scallions, and sesame seeds.

Notes

Serve immediately while noodles and eggs are hot.
