Pumpkin Bread

This is a classic, moist pumpkin bread. The method is straightforward: cream the butter and sugar, beat in the eggs and pumpkin, then fold in the dry ingredients.

Ingredients

Ingredients (~7 slices)

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup canned pumpkin not pie filling
  • 1/4 cup chopped walnuts
  • 1/4 cup butter 4 Tbsp, softened
  • 1/4 cup water
  • 1 large egg
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1/8 tsp baking powder

Instructions

  • Preheat oven to 350°F. Grease and flour 8x4 inch loaf pan.
  • Cream butter, sugar, and vanilla with mixer.
  • Beat in egg, then add pumpkin and water. Mix until combined.
  • Whisk dry ingredients in separate bowl.
  • Add dry ingredients to wet mixture. Fold gently until just combined.
  • Stir in chopped walnuts.
  • Pour batter into prepared pan. Smooth top.
  • Bake 50-60 minutes until toothpick comes out clean.
  • Let rest in pan 10 minutes, then cool on wire rack.

Notes

Do not overmix batter.
