Spicy Chili Oil Noodles

This uses instant ramen as the base but turns it into something completely different - you bloom the seasoning packets with fresh aromatics in hot oil to create this intense, savory sauce. The oil needs to be exactly 350F or it won't work right; too cool and nothing happens, too hot and everything burns.

Ingredients

For the Chili Oil

  • 1/2 cup vegetable oil
  • 2 seasoning/sauce packets from ramen packages
  • 1.5 tablespoons gochugaru
  • 1 stalk green onion finely chopped
  • 1 clove garlic finely chopped

For the Noodles

  • 2 packages Nongshim Neoguri Spicy Seafood Ramen noodles vegetable packets reserved

Instructions

  • Heat vegetable oil to 350F in a small saucepan.
  • In a heatproof bowl, combine ramen seasoning packets, gochugaru, chopped green onion, and garlic.
  • Bring large pot of water to boil. Cook ramen noodles with vegetable packets 3-4 minutes.
  • Pour hot oil carefully over seasoning mixture in bowl, stir to combine.
  • Drain noodles and add to chili oil mixture.
  • Toss noodles until well coated.
  • Serve immediately, garnish with extra green onions if desired.

Notes

Use a thermometer to ensure oil reaches correct temperature. Be careful when adding hot oil as mixture will bubble vigorously.
