Sweet & Spicy Jalapeño Canned Tomato Salsa

This sweet and spicy salsa uses candied jalapeños and pickled red onions to upgrade simple canned tomatoes. It is significantly better than store bought jars. You must let it sit in the fridge for at least 30 minutes so the flavors can meld.

Ingredients

Ingredients (~4 cups)

  • 2 cans petite diced tomatoes 14.5-oz each
  • 6 Tbsp pickled red onion finely chopped
  • 6 Tbsp candied jalapeños finely chopped
  • 2 Tbsp fresh cilantro very finely chopped
  • 2 Tbsp fresh oregano very finely chopped
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp ground cumin

Instructions

  • Drain tomatoes if desired for thicker salsa.
  • Combine tomatoes, pickled onion, candied jalapeños, cilantro, oregano, and all spices in a glass bowl.
  • Stir thoroughly to mix ingredients.
  • Cover and refrigerate 30 minutes before serving.

Notes

Chilling allows flavors to blend and develop.
