Ingredients

small to medium very ripe bananas

large egg + 1 yolk
or 2 small eggs

all-purpose flour
Instructions
Preheat oven to 350°F and line muffin tin with paper liners.
Mash bananas and measure 1 cup + 2 Tbsp into large mixing bowl.
Add sugar, melted butter, milk, vanilla, eggs, salt, and cinnamon. Stir well.
Mix in baking powder, then flour until just combined.
Fill muffin cups 3/4 full.
Bake 18-22 minutes until toothpick comes out clean.
Cool in pan 10 minutes, then transfer to wire rack.
Notes
Do not overmix batter to keep muffins tender.
