Simple Banana Muffins

This recipe is designed to use up those brown, spotty bananas sitting on your counter. It’s a simple, one-bowl batter that comes together in minutes. These muffins are fluffy, moist, and perfect for a quick breakfast or snack.

Ingredients

~9 muffins

  • 3 small to medium very ripe bananas
  • 1/2 cup granulated sugar
  • 4 1/2 Tbsp unsalted butter melted
  • 3 Tbsp half-and-half or whole milk
  • 1 1/2 tsp vanilla extract
  • 1 large egg + 1 yolk or 2 small eggs
  • 3/4 tsp kosher salt
  • 3/4 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 1/2 cups all-purpose flour

Instructions

  • Preheat oven to 350°F and line muffin tin with paper liners.
  • Mash bananas and measure 1 cup + 2 Tbsp into large mixing bowl.
  • Add sugar, melted butter, milk, vanilla, eggs, salt, and cinnamon. Stir well.
  • Mix in baking powder, then flour until just combined.
  • Fill muffin cups 3/4 full.
  • Bake 18-22 minutes until toothpick comes out clean.
  • Cool in pan 10 minutes, then transfer to wire rack.

Notes

Do not overmix batter to keep muffins tender.
