Cheesy Butter Ramen

Ingredients

  • 1 pack Nongshim Shin Black Ramen (with seasoning packets)
  • 20 fl oz (2.5 cups) water
  • 1 large egg
  • 2 slices Kraft Singles American cheese
  • 1/2 teaspoon unsalted butter
  • 1/4 teaspoon toasted white sesame seeds
  • 1 scallion, green part only, thinly sliced

First, Cook the Ramen and Poach the Egg

This is a very simple, one-pan recipe. Bring the water to a boil in a small saucepan over high heat.

Add the ramen noodles and cook for ~2 minutes. Stir in the seasoning packets from the ramen and continue to cook for another 30 seconds.

Remove the pan from the heat. Gently crack the whole egg into the center of the noodles. Don’t stir it; just use your chopsticks or a spoon to pull the noodles over the egg to cover it. Let it sit undisturbed for one minute. This will gently poach the egg in the residual heat of the broth.

Next, Assemble the Bowl

Carefully pour the entire contents of the saucepan—noodles, broth, and the poached egg—into a serving bowl.

Add the unsalted butter and the two slices of American cheese directly on top of the hot noodles. Stir everything together until the butter and cheese have melted into the broth, creating a creamy, rich sauce.

Garnish with the toasted sesame seeds and sliced scallions, and serve immediately.

This started as a Roy Choi hack but it's become its own thing – you cook Shin Black ramen, crack an egg right into the hot broth, then stir in American cheese and butter. The cheese melts into this creamy sauce that shouldn't work with spicy Korean ramen but absolutely does.

Instructions

  • Bring 20 fl oz water to boil in small saucepan over high heat.
  • Add ramen noodles, cook 2 minutes.
  • Stir in seasoning packets, cook 30 seconds more.
  • Remove from heat, crack egg into center of noodles.
  • Cover egg with noodles using chopsticks, let sit 1 minute.
  • Pour everything into serving bowl.
  • Add butter and cheese slices on top of hot noodles.
  • Stir until butter and cheese melt completely.
  • Garnish with sesame seeds and sliced scallions.
  • Serve immediately.

Notes

For best results, use Nongshim Shin Black Ramen and Kraft Singles American cheese.
