Ingredients
For the Gochujang Sauce
- 1/4 cup gochujang
- 3 tablespoons Kewpie mayonnaise
- 3 tablespoons Chinese black vinegar
For the Noodles & Garnish
- 4 packages ramen noodles
- 4 large eggs
- 2 tablespoons neutral oil, divided
- Sliced scallions
- Black sesame seeds
First, Cook the Noodles and Make the Sauce
Bring a large pot of water to a boil and cook the ramen noodles according to the package directions.
While the noodles are cooking, whisk together the gochujang, Kewpie mayonnaise, and Chinese black vinegar in a large bowl until the sauce is smooth. This bowl should be big enough to hold all the cooked noodles.
Next, Fry the Eggs
In a large non-stick skillet, heat one tablespoon of the neutral oil over medium-high heat. Fry four sunny-side-up eggs to your desired doneness.
Finally, Assemble and Serve
Drain the cooked noodles well and immediately add them to the bowl with the gochujang sauce. Toss everything together until the noodles are thoroughly coated.
Divide the sauced noodles among four bowls. Top each bowl with a fried egg, a sprinkle of sliced scallions, and a pinch of black sesame seeds. Serve immediately.
High Protein Gochujang Noodles
