Ingredients
For the Chili Oil
- 1/2 cup vegetable oil
- 2 seasoning/sauce packets from ramen packages
- 1.5 tablespoons gochugaru
- 1 stalk green onion, finely chopped
- 1 clove garlic, finely chopped
For the Noodles
- 2 packages Nongshim Neoguri Spicy Seafood Ramen noodles (vegetable packets reserved)
First, Prep the Noodles and Chili Oil Base
Bring a large pot of water to a boil. Add the 2 packages of dry noodles and the reserved vegetable packets and cook according to the package directions, usually ~3-4 minutes.
While the noodles cook, prepare the chili oil base. In a medium, heatproof mixing bowl, add the seasoning and sauce packets from the ramen, the gochugaru, the chopped green onion, and the chopped garlic. Mix to combine.
Next, Heat the Oil
In a small saucepan, heat the vegetable oil to 350F. Use a thermometer to be accurate; if the oil isn’t hot enough it won’t bloom the spices properly, and if it’s too hot it will burn them.
Finally, Make the Sauce and Serve
Once the oil is at temperature, carefully pour it directly into the heatproof bowl with the seasoning mixture. The mixture will bubble aggressively, so be careful not to burn yourself. Stir until everything is fully combined.
Drain the cooked noodles and immediately add them to the bowl with the hot chili oil. Toss everything together until the noodles are thoroughly coated in the sauce.
Transfer to a plate, garnish with more green onions if you like, and enjoy immediately.
Spicy Chili Oil Noodles

- Heat vegetable oil to 350F in a small saucepan.
- In a heatproof bowl, combine ramen seasoning packets, gochugaru, chopped green onion, and garlic.
- Bring large pot of water to boil. Cook ramen noodles with vegetable packets 3-4 minutes.
- Pour hot oil carefully over seasoning mixture in bowl, stir to combine.
- Drain noodles and add to chili oil mixture.
- Toss noodles until well coated.
- Serve immediately, garnish with extra green onions if desired.
