Sweet & Spicy Jalapeño Canned Tomato Salsa

Ingredients (~4 cups)

  • 2 cans (14.5-oz each) petite diced tomatoes
  • 6 Tbsp pickled red onion, finely chopped
  • 6 Tbsp candied jalapeños, finely chopped
  • 2 Tbsp fresh cilantro, very finely chopped
  • 2 Tbsp fresh oregano, very finely chopped
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp ground cumin

Make the Salsa

Open the cans of tomatoes. If you prefer a thicker salsa, drain off some of the excess juice before measuring.

Place the tomatoes, chopped pickled red onion, candied jalapeños, cilantro, oregano, salt, onion powder, garlic powder, black pepper, and cumin into a medium glass bowl.

Stir well until all the ingredients are thoroughly combined.

Chill and Serve

Cover the bowl tightly with plastic wrap.

Refrigerate for at least ~30 minutes before serving. This rest period is essential for the flavors to marry.

This sweet and spicy salsa uses candied jalapeños and pickled red onions to upgrade simple canned tomatoes. It is significantly better than store bought jars. You must let it sit in the fridge for at least 30 minutes so the flavors can meld.

  • Stir thoroughly to mix ingredients.
  • Cover and refrigerate 30 minutes before serving.

Notes

Chilling allows flavors to blend and develop.
