Ingredients (~9 muffins)

  • 3 small to medium very ripe bananas
  • 1/2 cup granulated sugar
  • 4 1/2 Tbsp unsalted butter, melted
  • 3 Tbsp half-and-half or whole milk
  • 1 1/2 tsp vanilla extract
  • 1 large egg + 1 yolk (or 2 small eggs)
  • 3/4 tsp kosher salt
  • 3/4 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 1/2 cups all-purpose flour

Make the Batter

Preheat your oven to ~350°F. Line a muffin tin with paper liners.

Peel and mash the bananas in a small bowl until smooth. Measure out 1 cup + 2 Tbsp of mashed banana into a large mixing bowl.

Add the sugar, melted butter, milk, vanilla, egg (and extra yolk), salt, and cinnamon to the mashed bananas. Stir well to combine.

Stir in the baking powder until fully incorporated.

Add the flour and stir just until combined and no large streaks of flour remain. Do not over-mix, or the muffins will be tough.

Bake

Use a spoon or ice cream scoop to fill the muffin cups about 3/4 full.

Bake for ~18-22 minutes. They are done when a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for ~10 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not overmix batter to keep muffins tender.
